Butter Chicken

4 Chicken breasts (skinless)
2 Tbsp curry powder
1 large onion, finely chopped
1 lrg can tomato sauce (or 2 cups)
4 - 6 Tbsp butter
1 tsp salt
4 tsp garlic, finely chopped
1 Cup whipping cream (or half & half)
3 tsp ginger, finely grated
1 Tbsp garahm masala
1 tsp jalapeno peppers, finely chopped
1 tsp paprika
Sticky rice
3 Tbsp fresh cilantro (optional)
Naan or other bread (optional)
Cut chicken into bite size pieces. In large saucepan, fry onions in butter until golden brown. Add garlic, ginger, jalapeno peppers, paprika and curry powder. Fry for a few seconds, then add chicken, salt and tomato sauce. Slowly bring to boil. Reduce heat and simmer for 10-15 minutes. Stir occasionally. Add cream, stir and simmer for 5 minutes. Add garahm masala. Serve over sticky rice with naan bread on the side and fresh cilantro on top. Freezes well.
Bone Soup

Eat like a caveman and lose weight with this simple low-carb dish, high in natural animal fats and full of vitamins & minerals... (1) place beef shank bones in a pot of water with a bit of celtic sea salt, bring to a boil and simmer for a couple hours. (2) when the meat and marrow separate easily from the bone, chop them up into small bits and return to pot. (3) season to taste and add vegetables about 15 minutes before serving: onions, garlic, spinach and broccoli are especially good in there. Dark greens are highest in Omega-3 so include them! (4) If you must have carbs with it, add some low-gluten noodles or enjoy with a low-yeast bread such as sourdough, and plenty of real butter. Yum!
Shepherd's Pie
It's a cloudy day and I feel like some comfort food. I found this recipe online - I've tried a few in the past that were ok, I figure I'll give this a go tonight. I'll let you know how it turns out.

Vegetarian Black Bean Chili
This recipe meets all three of my cooking criteria: Easy, quick and tasty!
Here it is.
Because it's vegetarian it doesn't feel as heavy as some chilis - but my husband, a definite carnivore, still loves it. I usually serve it with rice, grated cheese, sour cream, green onions and diced tomatoes. Mm! :)
Chicken Vesuvio by Giada De Laurentiis

I love Giada and I love this dish! A family favorite for sure!
So easy - all in one pot.
I don't use artichokes and butter. I use a bit more dried thyme.
You won't be disappointed. If you like chicken, you'll love this!
I've served this dish to guests and everyone has loved it.

Pioneer Woman’s Pasta Primavera

Made this for dinner on Saturday night. It was a beautiful day and I felt like something with lots of fresh vegetables -- and that would go good with a chilled glass of wine. This was really good - although I cooked the veggies a bit longer than she recommended.
